Makes 4 sandwiches
- ¼ cup mayonnaise
- ¼ cup finely chopped sweet red pepper
- 1 tablespoon finely chopped onion
- 1½ teaspoons curry powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 hard-cooked eggs, peeled and chopped
- ½ bunch Romaine lettuce or other lettuce
- 12 slices cracked-wheat bread, lightly toasted
- ¼ cup chutney
- 4 slices turkey-ham (4 oz)
- Stir together mayonnaise, sweet red pepper, onion, curry powder, salt and black pepper in medium-size bowl ; gently stir in eggs with rubber scraper, cover and refrigerate until ready to serve.
- For 1 sandwich, place some lettuce on one bread slice.
- Top with one quarter of the egg salad.
- Spread another slice of bread with some of the chutney, place bread, chutney side up, on egg salad.
- Top with one slice of turkey-ham.
- Spread a third slice of bread with some chutney and place bread, chutney side down, on top of ham.
- Cut sandwich in half or quarters, secure with wooden pick.
- Repeat to make 3 more sandwiches.
