Curried egg salad and ham club sandwich

 


Makes 4 sandwiches

  • ¼ cup mayonnaise
  • ¼ cup finely chopped sweet red pepper
  • 1 tablespoon finely chopped onion
  • 1½ teaspoons curry powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 hard-cooked eggs, peeled and chopped
  • ½ bunch Romaine lettuce or other lettuce
  • 12 slices cracked-wheat bread, lightly toasted
  • ¼ cup chutney
  • 4 slices turkey-ham (4 oz)
  1. Stir together mayonnaise, sweet red pepper, onion, curry powder, salt and black pepper in medium-size bowl ; gently stir in eggs with rubber scraper, cover and refrigerate until ready to serve.
  2. For 1 sandwich, place some lettuce on one bread slice.
  3. Top with one quarter of the egg salad.
  4. Spread another slice of bread with some of the chutney, place bread, chutney side up, on egg salad.
  5. Top with one slice of turkey-ham.
  6. Spread a third slice of bread with some chutney and place bread, chutney side down, on top of ham.
  7. Cut sandwich in half or quarters, secure with wooden pick.
  8. Repeat to make 3 more sandwiches.
