Coconut and apricots add a little surprise to every bite.
Makes about 6 dozen
- 1 cup butter or margarine, softened
- ¾ cup sugar
- ¾ cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¾ cup ground pecans
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups semisweet chocolate chips
- Two-third cup flaked coconut
- Two-third cup finely chopped dried apricots
- In a mixing bowl, cream butter and sugars ; add the eggs, one at a time, beating well after each addition ; beat in vanilla.
- Combine flour, ground pecans, baking soda and salt ; gradually add to the creamed mixture.
- Stir in remaining ingredients ; drop by tablespoonfuls 2 in. apart onto ungreased baking sheets.
- Bake at 375F (190C) for 10-12 minutes or until lightly browned ; cool for 1-2 minutes before removing to wire racks.
