This recipe makes extra papaya butter, which is wonderful spread on toast the next morning.
Serves 8 to 10
- 2 pineapples, peeled, cored and cut into medium-thick spears
- 1 recipe Sugar and Spice rub, click here for the recipe
Papaya butter
- 125 ml chopped papaya
- 125 ml unsalted butter, softened
- 15 ml freshly squeezed lemon juice
- Prepare a medium-hot fire in your grill.
- Prepare the butter : In a food processor, purée papaya, butter and lemon juice until smooth ; spoon into a microwave-safe bowl and set aside.
- Grill pineapple spears for about 2 minutes per side, turning once, until pineapple has nice char marks ; arrange on a platter and sprinkle with some of the rub.
- If necessary, microwave papaya butter on high for 5 to 10 seconds, or until soft ; spoon over pineapple and dust with a little more of the rub.
