For a bold burger, you can't beat this one, with its Moroccan spices and fiery topping.
4 burgers
Harissa mayonnaise
- ¼ cup mayonnaise
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon harissa (or to taste)
- Freshly squeezed lemon juice (opional)
- In a small bowl, whisk together all the ingredients ; set aside.
Lamb burger
- 1 lb ground lamb
- 3 tablespoons fine dry bread crumbs
- 2 tablespoons finely chopped green onion
- 1 taspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- ½ teaspoon cinnamon
- 4 kaiser rolls, hamburger buns or pita breads
- Leaf lettuce and sliced tomatoes, cucumber and onion
- Prepare a medium-hot fire in your grill.
- In a large bowl, using your hands, combine lamb, bread crumbs, green onion, cumin, coriander, turmeric and cinnamon ; form into four ½-inch (1 cm) thick patties.
- Grill burgers for 3 to 4 minutes per side, turning once, or until a meat thermometer inserted in the center of a burger registers 160F (71C).
- Place each burger on a roll, top with harissa mayonnaise and garnish with lettuce, tomato, cucumber and onion.
