- 30 ml olive oil
- 30 ml ghee (clarified butter)
- 250 ml pumpkin, chopped
- 125 ml celery, chopped
- 3 slices bacon, chopped
- 1 lb beef meat for stew, cubed
- 1galic clove, minced
- 1 onion, chopped
- 15 ml red wine vinegar
- 500 ml beef stock
- 15 ml tomato purée
- 1 cinnamon stick
- 1 lemon peel strip
- 3 thyme sprigs, chopped
- Salt and black pepper to taste
- Put a saucepan ocer medium heat and warm oil, add in celery, garlic and onion and cook for 3 minutes ; tir in beef and bacon, and cook until slightly brown.
- Pour in vinegar, ghee, lemon peel strip, stock, tomato purée, cinnamon stick and pumpkin ; cover and cook for 25 minutes.
- Get rid of the lemon peel and cinnamon stick.
- Adjust the seasoning and top with thyme to serve.
