Thyme Beef & Bacon Casserole (Keto for beginners)

 


4 servings

  • 30 ml olive oil
  • 30 ml ghee (clarified butter)
  • 250 ml pumpkin, chopped
  • 125 ml celery, chopped
  • 3 slices bacon, chopped
  • 1 lb beef meat for stew, cubed
  • 1galic clove, minced
  • 1 onion, chopped
  • 15 ml red wine vinegar
  • 500 ml beef stock
  • 15 ml tomato purée
  • 1 cinnamon stick
  • 1 lemon peel strip
  • 3 thyme sprigs, chopped
  • Salt and black pepper to taste
  1. Put a saucepan ocer medium heat and warm oil, add in celery, garlic and onion and cook for 3 minutes ; tir in beef and bacon, and cook until slightly brown.
  2. Pour in vinegar, ghee, lemon peel strip, stock, tomato purée, cinnamon stick and pumpkin ; cover and cook for 25 minutes.
  3. Get rid of the lemon peel and cinnamon stick.
  4. Adjust the seasoning and top with thyme to serve.
