- 200 grams (8 slices) bacon, sliced into 1 cm pieces (lardons)
- 1 onion, chopped
- ½ loaf of country bread, cut into 2cm cubes
- 500 ml Gruyere cheese, grated
- 5 eggs
- 60 ml cream 35%
- 250 ml milk
- 5 ml mustard powder
- Salt and pepper
- In a skillet, cook bacon and onion 5 to 6 minutes or until cooked; retain the cooking fat.
- In a large bowl, combine the bread cubes, onions, bacon and its fat, and the cheese.
- Preheat oven to 350F (175C).
- In a bowl, whisk the eggs, then pour in the cream, milk and mustard; season.
- Pour the liquid over the bread and mix well; wait 10 minutes.
- Stir again, then pour the mixture into a previously oiled baking dish; bake for 25 minutes.
- Remove from oven and serve.
