- - 24 chicken wings, cut in half
Whiskey Marinade
- - 3 tbsp. honey
- - 3 tbsp. tbsp whiskey
- - 3 tbsp. tomato paste
- - 1 C. lime juice
- - 3 tbsp. tbsp oil
- - 1 C. tbsp salted herbs
- - 3 large cloves of garlic, chopped
- - ½ tsp. sea salt
- - Pinch of cayenne
- - A few drops of liquid hickory smoke sauce, to taste
Blue cheese and lime sauce
- - 2/3 cup buttermilk
- - 150 gr blue cheese, in pieces (e.g. Fourme d’Ambert)
- - The zest of a lime
- - 1 C. lime juice
- - 1 clove of garlic, cut in half
- - Salt and freshly ground pepper, to taste
- - 2 tbsp. tbsp sunflower oil
- In a bowl, vigorously whisk all the ingredients for the whiskey marinade.
- Marinate the chicken wings in the marinade for 24 to 48 hours.
- Remove the chicken wings from the marinade and place them on a baking sheet lined with parchment paper.
- Bake in 375F oven for 25 minutes or until cooked through.
- Brown the wings under the grill, then turn them over and let brown for 2 to 3 minutes.
- Serve immediately with the blue cheese and lime sauce.
Blue cheese and lime sauce
- Place all ingredients in the food processor container.
- Pulse a few times until you obtain a dip consistency.
