Whiskey chicken wings with blue cheese and lime sauce

 


For 4 servings

  • - 24 chicken wings, cut in half

Whiskey Marinade

  • - 3 tbsp. honey
  • - 3 tbsp. tbsp whiskey
  • - 3 tbsp. tomato paste
  • - 1 C. lime juice
  • - 3 tbsp. tbsp oil
  • - 1 C. tbsp salted herbs
  • - 3 large cloves of garlic, chopped
  • - ½ tsp. sea salt
  • - Pinch of cayenne
  • - A few drops of liquid hickory smoke sauce, to taste

Blue cheese and lime sauce

  • - 2/3 cup buttermilk
  • - 150 gr blue cheese, in pieces (e.g. Fourme d’Ambert)
  • - The zest of a lime
  • - 1 C. lime juice
  • - 1 clove of garlic, cut in half
  • - Salt and freshly ground pepper, to taste
  • - 2 tbsp. tbsp sunflower oil

  1. In a bowl, vigorously whisk all the ingredients for the whiskey marinade.
  2. Marinate the chicken wings in the marinade for 24 to 48 hours.
  3. Remove the chicken wings from the marinade and place them on a baking sheet lined with parchment paper.
  4. Bake in 375F oven for 25 minutes or until cooked through.
  5. Brown the wings under the grill, then turn them over and let brown for 2 to 3 minutes.
  6. Serve immediately with the blue cheese and lime sauce.

Blue cheese and lime sauce

  1. Place all ingredients in the food processor container.
  2. Pulse a few times until you obtain a dip consistency.
