Cranberry orange loaf (Country Breakfasts)


1 loaf
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • ½ cup orange juice
  • Grated peel of 1 orange
  • 2 tablespoons butter or margarine, melted
  • 2 tablespoons hot water
  • 1 cup fresh or frozen cranberries
  • 1 cup chopped walnuts
  1. Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
  2. In a small bowl, beat egg, add orange juice, peel, butter  and water.
  3. Stir into dry ingredients just until moistened ; fold in cranberries and walnuts.
  4. Spoon into a greased 9-in. x 5-in. x 3-in. loaf pan ; bake at 325F for 1 hour or until bread test done.
  5. Cool in pan for 10 minutes before removing to a wire rack.
