Lemony Fish Pie (Comfort food)


Serves 4
  • 500 gr potatoes, peeled and diced
  • 500 gr tilapia, cut into bite-sized pieces
  • 1 tablespoon all-purpose flour
  • Pinch of salt
  • 1 tablespoon olive oil
  • 2 cups frozen mixed vegetables
  • ¾ cup 35% cream
  • 1 tablespoon dried dill
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • ½ teaspoon garlic salt
  1. Spray a 2-L casserole dish with oil.
  2. Boil potatoes in a medium saucepan until tender.
  3. Toss fish in flour and salt in a small bowl ; heat a medium non-stick frying pan over medium-high, add oil, then fish.
  4. Cook 2 minutes, then add frozen vegetables, ½ cup cream and dill ; cook until thickened, about 2 more minutes.
  5. Stir in lemon zest and juice, transfer to prepared dish.
  6. Drain potatoes, mash with remaining cream and garlic salt ; spread over fish mixture.
  7. Broil until golden, about 5 minutes.
