Made with ground turkey, these tacos are a lighter alternative to their beef cousin and take practically no time at all to prepare.
Makes 4 servings
- ½ pound ground turkey
- 1 small onion, chopped
- 1 tablespoon vegetable oil
- 1 can (10 ounces) pinto beans
- ½ cup hot or mild salsa
- 8 packaged taco shells
- Garnish : Chopped avocado, chopped or sliced tomato, shredded Monteray Jack cheese and shredded lettuce
- Sauté turkey and onion in oil in large skillet until lightly browned, about 5 minutes, stirring to break up clumps ; drain beans and rinse.
- Push turkey to one side of skillet, add beans ; mash one-third of beans with fork.
- Stir in half the salsa ; heat until hot.
- To serve, divide mixture into taco shells ; serve with remaining salsa and garnishes.
