Barbecue sauce


Doesn't take much time to make your own. Also delicious as a basting sauce or a dipping sauce. If used for the latter, be sure the sauce has not been used to marinate raw meat.


Makes about 3 cups
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 3 large cloves garlic, finely chopped
- 1 bottle (12 ounces) chili sauce
- 1½ cups catsup
- ¼ cup steak sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons red wine vinegar
- ½ teaspoon tabasco sauce
- 2 tablespoons brown sugar
- 1 tablespoon dry mustard
- ½ teaspoon pepper

Heat oil in saucepan over medium heat.
Add onion and garlic, sauté for 2 minutes.
Stir in the remaining ingredients and simmer 15 minutes, stirring frequently.

Use as a marinade, marinated beef for 1 hour, or chicken for 30 minutes.

The sauce can be made up to 3 days ahead, and refrigerated, covered.
