Turkey sausage breakfast patties



                Start the day with this leaner version of a breakfast favorite. Use also as a filling for stuffed vegetables.


Makes 12 patties (2 patties per serving)
  • ½ cup old-fashioned oats
  • 2 egg whites
  • 2 tablespoons maple syrup
  • ½ teaspoon tabasco sauce
  • 1 teaspoon salt
  • ¾ teaspoon rubbed sage
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 1½ pounds ground turkey
  • ½ Granny Smith apple, cored and shredded
  • ½ cup finely chopped onion
  • 3 tablespoon all-purpose flour
  • Vegetable oil, for frying
  1. Place oats in food processor and whirl until texture of coarse meal.
  2. Stir together egg whites, maple syrup, tabasco, salt, sage, nutmeg and ginger in a large bowl.
  3. Add turkey, apple, onion and oats.
  4. Divide mixture into 12 equal portions and shape into patties.
  5. Dredge lightly in flour.
  6. Heat 1 teaspoon oil in large non-stick skillet.
  7. Add patties; fry over medium-high heat for 6 minutes or until browned on both sides, turning over once.
  8. Add more oil, as needed.
