Hush Puppies

     These cornmeal fritters are a delicious complement to fried fish and chicken.

Makes 6 servings (2 dozen)
  • 1¾ cups white cornmeal
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup buttermilk
  • 1 egg, slightly beaten
  • 3 green onions, chopped
  • Vegetable oil, for frying
  1. In a medium-size bowl, combine cornmeal, salt, baking powder and baking soda.
  2. In a small bowl, beat together buttermilk and egg ; add to dry ingredients alog with onion and stir just to blend ingredients.
  3. Pour oil into heavy medium-size saucepan to depth of 3 to 4 inches ; heat oil over medium heat until 350F.
  4. Scoop out 1 tablespoon of dough ; push off with rubber spatula into hot oil.
  5. Fry a few at a time without crowding the saucepan ; fry, turning once, until hush puppies turn a golden brown and float to the top, 3 to 5 minutes.
  6. Remove with slotted spoon to paper towel to drain ; keep warm in preheated slow oven (300F).
