Makes 6 servings (2 dozen)
- 1¾ cups white cornmeal
- 1 teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup buttermilk
- 1 egg, slightly beaten
- 3 green onions, chopped
- Vegetable oil, for frying
- In a medium-size bowl, combine cornmeal, salt, baking powder and baking soda.
- In a small bowl, beat together buttermilk and egg ; add to dry ingredients alog with onion and stir just to blend ingredients.
- Pour oil into heavy medium-size saucepan to depth of 3 to 4 inches ; heat oil over medium heat until 350F.
- Scoop out 1 tablespoon of dough ; push off with rubber spatula into hot oil.
- Fry a few at a time without crowding the saucepan ; fry, turning once, until hush puppies turn a golden brown and float to the top, 3 to 5 minutes.
- Remove with slotted spoon to paper towel to drain ; keep warm in preheated slow oven (300F).
