Creamy pasta sauce (Diabetic cooking)


Serve this garlicy sauce on your favorite pasta.

-4 garlic cloves, minced
-2 tablespoon olive oil
-1 can 13½ oz. skim evaporated milk
-2 tablespoon all-purpose flour
-3 cups tomato vegetable sauce
-½ teaspoon sweet basil
-½ teaspoon oregano
-¼ teaspoon salt
¼ teaspoon pepper

Sauté garlic in olive oil in medium saucepan until soft.
Whisk skim milk into flour in small bowl.
Add to saucepan, heat, stirring constantly, until boiling and thickened.
Add tomato sauce, basil and oregano.
Heat and stir until heated through.
Add salt and pepper, stir.
Makes 4 cups.

Nutrition information : ½ cup : 95 calories; 2.1 gr total fat (0.3 gr sat, 1.9 mg cholesterol; 273 mg sodium; 6 gr protein; 15 gr carbohydrate; 2 gr dietary fiber.

For a smooth sauce, purée in blender to desired consistency.
