For 12 puff pastries

  • 250 g ready-to-use puff pastry
  • 100 g fresh goat cheese, crumbled
  • 170 g canned smoked oysters
  • 1 egg, beaten
  • Salt and pepper from the mill.

  1. Roll out the dough with a rolling pin on a floured work surface.
  2. If the dough is square, roll it out into a rectangle, which you will cut in half lengthwise.
  3. If the dough is round, cut out a large square in the centre, which you will lower into a rectangle; then gather the scraps into a ball and roll it out into a new rectangle.
  4. Place a large line of crumbled cheese in the center of each rectangle of dough, then cover with the smoked oysters.
  5. Brush the sides of the rectangles with beaten egg, then fold the dough over the stuffing to make a roll; press lightly to seal edges.
  6. Preheat the oven to 400F (200C).
  7. Brush tops of rolls with remaining beaten egg; sprinkle with salt and pepper.
  8. Cut each roll into 3 cm thick portions; arrange them on oiled baking sheets.
  9. Bake for 12 minutes, until the puff pastry is golden brown.
