Nice texture with bits of apple. A good breakfast or snack.
Combine in a large bowl :
-1¼ cups whole wheat flour
-1 cup quick-cooking rolled oats
-¼ cup packed, brown sugar
-2½ teaspoon baking powder
-¼ teaspoon baking soda
-¼ teaspoon of each, salt, nutmeg and cinnamon
Combine in a small bowl :
-1 cup 1% buttermilk
-1 large egg, fork-beaten
-2 tablespoons canola oil
Pour the liquid ingredients into the dry ingredients.
Add :
-1 apple peeled and diced
Stir just until moistened.
Spray muffin cups with no-stick cooking spray.
Measure about ¼ cup into each muffin cup.
Bake in 375*F oven for 15-18 minutes, cool in pan for 5 minutes before turning out.
