Beet and apple salad

     Olive oil has some vitamins and minerals and essential fatty acids, but the body needs more. It needs all the diverse essential fatty acids and all the vitamins and minerals you can feed it.



Serves 6 to 8
  • 2 tablespoons raw honey
  • 2 tablespoons raw apple cider vinegar
  • 2 tablespoon cold-pressed, extra-virgin olive oïl
  • Salt and pepper to taste
  • 2 pounds beets
  • 1 apple
  • 2 teaspoons chopped fresh parsley
  1. Combine the honey, vinegar, and olive oïl in a small bowl, season with salt and pepper and set aside.
  2. Peel and slice the beets thinly and put in a salad bowl.
  3. Peel and slice the apple thinly and add to the beets.
  4. Toss the apple and the beets with the dressing, sprinkle with the parsley, and serve.
