- 2 tablespoons raw honey
- 2 tablespoons raw apple cider vinegar
- 2 tablespoon cold-pressed, extra-virgin olive oïl
- Salt and pepper to taste
- 2 pounds beets
- 1 apple
- 2 teaspoons chopped fresh parsley
- Combine the honey, vinegar, and olive oïl in a small bowl, season with salt and pepper and set aside.
- Peel and slice the beets thinly and put in a salad bowl.
- Peel and slice the apple thinly and add to the beets.
- Toss the apple and the beets with the dressing, sprinkle with the parsley, and serve.
