Arkansas Derby pie

Serves 6 to 8

• 3 eggs
• ¾ cup sugar
• 1 cup dark corn syrup
• 1 tablespoon melted butter
• ½ teaspoon salt
• 2 tablespoons Southern Comfort
• 1 teaspoon vanilla extract

• ¼ cup coconut
• ½ cup chocolate chips
• ½ cup pecans

• 1 unbaked 9-inch pie crust (click here for recipe)

1. Beat the eggs slightly with an electric mixer, add the sugar, corn syrup, butter, salt, Southern Comfort and vanilla.
2. In a bowl, mix the coconut, chocolate chips and pecans.
3. Sprinkle the pecan mixture over the unbaked pie shell, pour the syrup mixture over the pecan mixture.
4. Bake in a 375F oven for 45 minutes.
