Serves 6 to 8
- 3 eggs
- ¾ cup sugar
- 1 cup dark corn syrup
- 1 tablespoon melted butter
- ½ teaspoon salt
- 2 tablespoons Southern Comfort
- 1 teaspoon vanilla extract
- ¼ cup coconut
- ½ cup chocolate chips
- ½ cup pecans
- Beat the eggs slightly with an electric mixer, add the sugar, corn syrup, butter, salt, Southern Comfort and vanilla.
- In a bowl, mix the coconut, chocolate chips and pecans.
- Sprinkle the pecan mixture over the unbaked pie shell, pour the syrup mixture over the pecan mixture.
- Bake in a 375F oven for 45 minutes.
