Using the Rotisserie (Barbecue and Grilling)



                To spit-roast, or rotisserie-cook, first set up your rotisserie on the grill. Every gas grill as a different way to set up a rotisserie, so this i just an overview. Refer to your manufacturer's directions for the best way to set up the rotisserie on your grill. The drip pan should contain 2 to 3 inches of liquid (marinade, vinegar, juice, beer, wine or just plain water) whatever you would like for aroma. The liquid will steam up into the food, adding moisture and a wonderful aroma as the food turns and cooks. Replenish with additional liquid as necessary.
    
                With the grill off, measure the food over the drip pan. The pan will prevent flare-ups, so make sure the meat, the poultry or fish is not larger than the drip pan you are planning to use. If it is, use either a larger pan or an additional drip pan. For easy cleanup, use disposable aluminium pans.

                It's very important to balance the meat on the spit so it can turn easily. If the meat is not balance, it could shorten the life of your rotisserie. To balance the rod, hold it so each end lies across the palms of your hands ; the heavy side of the food will rotate down. Position the food on the rod so that there is no heavy side.

                Place the spit on the rotisserie. Start the rotisserie, letting it rotate until you're sure the meat turn easily. Place the drip pan under the food and add 2 to 3 inches of liquid to the pan. (This helps keep the food moist and prevents the drippings from burning.)

                Check to make sure the grill's lid will close while the rotisserie is on. Depending on the temperature of your grill, you may want to prop the grill lid open a bit with bricks or metal cans so that it doesn't get too hot.

                Heat the grill to medium-high. Close the lid and cook. After 30 minutes, make sure you have achieved a temperature of close to 350F (180C). Continue to check the food, the temperature and the drip pan at least once an hour. You may need to add liquid to the drip pan during cooking.

                When the food is done, lift the rotisserie off the grill. Place it on a baking sheet, then remove the rod and retrieve your food.
