Simply grilled char, a pink-fleshed fish with a flavor and texture between salmon and trout, is delicious served with an aïoli, a beurre blanc or a fresh herb garnish.
Serves 4
- 4 skinless arctic char fillets (about 7 oz / 200 gr each)
- Olive oil
- Kosher salt and freshly ground black pepper
- 2 lemons, halved
- 1 tablespoon chopped fresh basil leaves
- Prepare a hot fire in your gril.
- Rinse fish and pat dry with paper towels ; brush fish with olive oil and season to taste with salt and pepper.
- Place fish flesh side down on the grill ; gril for 10 minutes per inch (2.5 cm) of thickness, turning once, or until fish is opaque and flakes easily with a fork.
- Meanwhile, lightly brush the cut side of each lemon half with olive oil ; grill cut side down for about 3 minutes, until lightly browned and warmed through.
- Sprinkle fish with basil and serve with half a grilled lemon on the side.
