Makes 20 muffins
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1½ tablespoons baking powder
- ½ teaspoon salt
- 1 tablespoon cinnamon
- 2 cups bran
- 4 eggs, beaten
- 1½ cups oil
- 1¼ cups brown sugar
- ¼ cup molasses
- 3 cups grated carrots
- 1 cup sliced almonds
- Cinnamon-sugar mixture
- Grease 20 muffin cups.
- In a large bowl sift together the flour, baking soda, baking powder, salt, and cinnamon ; add bran to the flour mixture.
- In a separate bowl combine the beaten eggs, oil, brown sugar, and molasses ; add the egg mixture to the flour mixture.
- Add the carrots and almonds ; fill the prepared muffin cups and sprinkle cinnamon-sugar on top.
- Bake in a 350F (180C) oven for 20 to 25 minutes.
