Spinach Squares

 

Serves 8

• ¼ cup butter
• 3 eggs
• 1 cup all-purpose flour
• 1 cup milk
• 1 tablespoon baking powder
• 1 pound Monteray Jack cheese, shredded
• 2-10 ounces packages frozen chopped spinach (thawed, drained, and squeezed)
• 1 small onion, chopped
• Dash garlcic

1. Melt the butter and grease all sides of a 9 x 13-inch baking dish.
2. In a large bowl beat the eggs, and add the flour, milk, and baking powder ; mix well.
3. Add the cheese, spinach, onion, and garlic.
4. Pour into the prepared baking dish ; bake in a 350F (180C) oven for 35 minutes.
