Cranberry-Pecan Pie

 


Serves 6 to 8

  • 1 cup sugar
  • 1½ tablespoons all-purpose flour
  • ¼ cup softened butter
  • 2 eggs
  • ¾ cup light corn syrup
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated orange peel
  • ½ teaspoon nutmeg
  • 1 cup pecans (or walnuts), chopped
  • 1 cup fresh or frozen cranberries
  • 1 9-inch unbaked pastry shell
  • Whipped cream, optional
  1. In a large bowl cream together the sugar, the flour, and butter.
  2. Add eggs, corn syrup, salt, vanilla, orange peel, and nutmeg ; beat until well blended.
  3. Stir in nuts and cranberries ; pour into the pastry shell.
  4. Bake in a 350F (180C) oven for 60 to 70 minutes or until a knife inserted in center comes out clean.
  5. If desired, serve with dollop of whipped cream.
