Serves 6 to 8
- 1 cup sugar
- 1½ tablespoons all-purpose flour
- ¼ cup softened butter
- 2 eggs
- ¾ cup light corn syrup
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon grated orange peel
- ½ teaspoon nutmeg
- 1 cup pecans (or walnuts), chopped
- 1 cup fresh or frozen cranberries
- 1 9-inch unbaked pastry shell
- Whipped cream, optional
- In a large bowl cream together the sugar, the flour, and butter.
- Add eggs, corn syrup, salt, vanilla, orange peel, and nutmeg ; beat until well blended.
- Stir in nuts and cranberries ; pour into the pastry shell.
- Bake in a 350F (180C) oven for 60 to 70 minutes or until a knife inserted in center comes out clean.
- If desired, serve with dollop of whipped cream.
