Serves 4 to 6
- 6 slices whole grain bread
- 8 slices Gruyère cheese, ½-inch thick
- ½ pound shrimp (or more if desired)
- 4 eggs
- 2 cups milk
- 1 teaspoon dry mustard
- 1 tablespoon fresh chives, minced
- ¼ teaspoon cayenne pepper
- 2 tablespoons chopped parsley
- Butter a large shallow casserole and place the bread slices on the bottom ; top the bread with cheese and cover with shrimp.
- In a separate bowl, mix the eggs, milk, and seasonings with a wire whip.
- Pour over the bread, cheese, and shrimp ; refrigerate for 1½ hours, until the bread has absorbed most of the liquid.
- Bake in a 350F (180C) oven for 25 to 30 minutes.
