Maine Shrimp and Gruyère Casserole

 


Serves 4 to 6 

  • 6 slices whole grain bread
  • 8 slices Gruyère cheese, ½-inch thick
  • ½ pound shrimp (or more if desired)
  • 4 eggs
  • 2 cups milk
  • 1 teaspoon dry mustard
  • 1 tablespoon fresh chives, minced
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons chopped parsley
  1. Butter a large shallow casserole and place the bread slices on the bottom ; top the bread with cheese and cover with shrimp.
  2. In a separate bowl, mix the eggs, milk, and seasonings with a wire whip.
  3. Pour over the bread, cheese, and shrimp ; refrigerate for 1½ hours, until the bread has absorbed most of the liquid.
  4. Bake in a 350F (180C) oven for 25 to 30 minutes.
