Makes 2 dozen squares
- 1 cup butter or margarine, softened
- 2 cups brown sugar
- 2 eggs
- ½ cup cold coffee
- 3 tablespoons maple syrup
- 3½ cups sifted all-purpose flour
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cloves
- 2 teaspoons cinnamon
- 2cups thick applesauce
- ½ cup nuts
- 1 cup raisins
- Lightly grease and flour a 9x13-inch pan.
- In a large bowl cream together the butter, sugar, and eggs ; mix in the coffee and maple syrup.
- In a separate bowl mix together the dry ingredients ; blend the dry ingredients into the creamed mixture.
- Add the applesauce, nuts, and raisins, mixing well ; spread evenly in the prepared pan.
- Bake in a 350F (180C) oven for 25 to 35 minutes ; cut into squares.
