Spinach Pie

 


Serves 4 to 6 

  • 1 frozen 9-inch pie crust
  • 6 slices bacon, chopped
  • 1 onion, chopped
  • 1 10-ounce package frozen chopped spinach, thawed and drained well
  • 15 ounces Ricotta cheese
  • 1 cup grated Parmesan cheese
  • 3 eggs
  • Pinch of nutmeg
  • Dash pepper
  • Dash Tabasco
  • Sliced tomato for garnish
  1. In a 375F (190C) oven prebake the pie crust for 10 minutes until firm.
  2. In a skillet sauté the bacon and drain ; sauté the onion in the bacon fat and drain.
  3. In a medium bowl mix the spinach with the Ricotta and add the bacon, onion and Parmesan ; add the eggs, mixing well.
  4. Stir in the nutmeg, pepper and Tabasco.
  5. Spread the filling in the pie vrust and bake for 30 minutes, or until done.
