Serves 4 to 6
- 1 frozen 9-inch pie crust
- 6 slices bacon, chopped
- 1 onion, chopped
- 1 10-ounce package frozen chopped spinach, thawed and drained well
- 15 ounces Ricotta cheese
- 1 cup grated Parmesan cheese
- 3 eggs
- Pinch of nutmeg
- Dash pepper
- Dash Tabasco
- Sliced tomato for garnish
- In a 375F (190C) oven prebake the pie crust for 10 minutes until firm.
- In a skillet sauté the bacon and drain ; sauté the onion in the bacon fat and drain.
- In a medium bowl mix the spinach with the Ricotta and add the bacon, onion and Parmesan ; add the eggs, mixing well.
- Stir in the nutmeg, pepper and Tabasco.
- Spread the filling in the pie vrust and bake for 30 minutes, or until done.
