The name "Choisy" simply designates any preparation containing lettuce: the Choisy omelette is stuffed with a chiffonade of lettuce.
For 6 servings
- 1 onion, minced
- 15 ml vegetable oil
- 2 garlic cloves, minced
- 250 ml parsley with stems, coarsely chopped
- 1 liter vegetable stock
- 2 potatoes, peeled and sliced
- ½ leaf lettuce, shredded
- 60 ml fresh goat cheese
- Salt and pepper
- In a large saucepan, sauté the onion in the oil for 2 to 3 minutes; add garlic and parsley.
- Pour in broth, then add potatoes and lettuce; simmer for 30 minutes over low heat.
- Add the goat cheese and, using a blender, grind everything to obtain a smooth and creamy soup; season and serve.
