Choisy soup

 


                The name "Choisy" simply designates any preparation containing lettuce: the Choisy omelette is stuffed with a chiffonade of lettuce.

For 6 servings

  • 1 onion, minced
  • 15 ml vegetable oil
  • 2 garlic cloves, minced
  • 250 ml parsley with stems, coarsely chopped
  • 1 liter vegetable stock
  • 2 potatoes, peeled and sliced
  • ½ leaf lettuce, shredded
  • 60 ml fresh goat cheese
  • Salt and pepper

  1. In a large saucepan, sauté the onion in the oil for 2 to 3 minutes; add garlic and parsley.
  2. Pour in broth, then add potatoes and lettuce; simmer for 30 minutes over low heat.
  3. Add the goat cheese and, using a blender, grind everything to obtain a smooth and creamy soup; season and serve.
