Carrot, Ginger and Orange Soup

 


For 6 servings

  • 30 ml butter
  • 2 onions, minced
  • 30 ml honey
  • 4 carrots, peeled and sliced
  • 30 ml fresh ginger, peeled and minced
  • 1 liter vegetable stock
  • 1 Yukon Gold potato, peeled and cubed
  • 1 orange, peeled and cut into slices
  • 2 ml allspice
  • Salt and pepper

  1. In a large saucepan, melt the butter and sauté the onions for 2 to 3 minutes; add the honey, carrots and ginger, then continue cooking for 4 to 5 minutes.
  2. Pour in the vegetable broth and the rest of the ingredients; season and simmer for 30 minutes over low heat.
  3. Using a blender, grind everything to obtain a smooth and creamy soup.
  4. Serve the soup decorated with a few vegetable chips.
