For 6 servings
- 30 ml butter
- 2 onions, minced
- 30 ml honey
- 4 carrots, peeled and sliced
- 30 ml fresh ginger, peeled and minced
- 1 liter vegetable stock
- 1 Yukon Gold potato, peeled and cubed
- 1 orange, peeled and cut into slices
- 2 ml allspice
- Salt and pepper
- In a large saucepan, melt the butter and sauté the onions for 2 to 3 minutes; add the honey, carrots and ginger, then continue cooking for 4 to 5 minutes.
- Pour in the vegetable broth and the rest of the ingredients; season and simmer for 30 minutes over low heat.
- Using a blender, grind everything to obtain a smooth and creamy soup.
- Serve the soup decorated with a few vegetable chips.
