Makes 2 sandwiches
- 2 cups sliced mushrooms
- Pinch of salt
- Pinch of black pepper
- Pinch of crushed dried rosemary
- 2 tbsp. low-fat mayonnaise
- 4 slices whole wheat bread, toasted
- 2 slices fat-free ham reduced in salt
- 2 thin slices of low-fat Swiss cheese
- Spray large nonstick skillet with cooking spray; heat over medium-high heat.
- Add mushrooms and cook, stirring, 5 minutes or until lightly browned; sprinkle with salt, pepper and rosemary.
- Spread mayonnaise on half of the bread slices; also cover with mushrooms, ham, cheese and the last slices of bread.
