Mushroom, Ham and Cheese Sandwiches

 


Makes 2 sandwiches

  • 2 cups sliced mushrooms
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of crushed dried rosemary
  • 2 tbsp. low-fat mayonnaise
  • 4 slices whole wheat bread, toasted
  • 2 slices fat-free ham reduced in salt
  • 2 thin slices of low-fat Swiss cheese

  1. Spray large nonstick skillet with cooking spray; heat over medium-high heat.
  2. Add mushrooms and cook, stirring, 5 minutes or until lightly browned; sprinkle with salt, pepper and rosemary.
  3. Spread mayonnaise on half of the bread slices; also cover with mushrooms, ham, cheese and the last slices of bread.
