Chipotle Grilled Chicken Sandwiches

 


Makes 4 sandwiches

  • ½ cup fat-free sour cream
  • 2 tbsp. light mayonnaise
  • 1 can of chipotle peppers in adobo sauce
  • 2 tbsp. canned chipotle adobo sauce
  • Pinch of salt
  • 1 medium lime, to divide
  • 4 small boneless, skinless chicken breasts (120 g each), slightly flattened
  • Black pepper
  • 2 slices of Swiss cheese, cut in half diagonally
  • 4 whole wheat hamburger buns, separated
  • 4 romaine lettuce leaves
  • 4 thin slices of red onion

  1. Spray barbecue grate with cooking spray; prepare the barbecue for direct cooking.
  2. Combine sour cream, mayonnaise, chipotle pepper, adobo sauce and salt in a food processor or blender; blend until smooth.
  3. Squeeze juice from half a lime evenly over chicken; grill the chicken for 10 minutes over medium-high heat.
  4. Turn the chicken, pepper and grill for 10 minutes or until the chicken is cooked through (165F).
  5. Place chicken to side of barbecue; squeeze remaining lime half over chicken.
  6. Top chicken with cheese; meanwhile, lightly toast hamburger buns.
  7. Arrange lettuce, chicken and onion evenly on half the buns; spread the other half of the buns with the chipotle mixture and place on the sandwich.
