Apple-pumpkin pie

Serves 6 o 8
  • 1 uncooked 9-inch pie shell
  • 2 tablespoons all-purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 2½ cups peeled, thinly sliced apples
  • 1 cup canned pumpkin (or fresh if you do your own)
  • Two-third cup evaporated milk
  • 1 egg
  • ½ cup sugar
  • ½ teaspoon ginger
  • ¼ teaspoon salt
  • Pinch of cloves
  1. In a medium bowl, combine the flour, brown sugar and cinnamon, stir in the apples.
  2. Place mixture in the uncooked pie shell and set aside.
  3. In a large bowl, combine the remaining ingrédients, mixing thoroughly.
  4. Pour the mixture over the apple mixture in the pie shell.
  5. Bake in 425F oven for 15 minutes, reduce the oven temperature to 350F and bake for an additional 30 minutes, or until the filling is set.
  6. Cool on a rack and refrigerate leftovers.
