Cream of brocoli-cheddar soup


Serves 4 to 6
  • 4 cups chopped brocoli
  • 4 cups chicken broth
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1½ cups cream
  • 1 cup grated sharp Cheddar cheese
  • Freshly ground Pepper
  • Pinch Cayenne
  • Pinch nutmeg
  1. In a large saucepan cook the brocoli in the chicken broth until tender.
  2. Purée in a food processor or blender.
  3. In a large pot melt the butter, whisk in the flour and cook for 2 to 3 minutes.
  4. Whisk in the brocoli purée, cook 5 minutes, or until thickened and bubbly.
  5. Whisk in the cream, cheese, Pepper, Cayenne and nutmeg.
  6. Continue cooking until the cream is heated through and the cheese is melted.
