Serves 4 to 6
- 4 cups chopped brocoli
- 4 cups chicken broth
- ¼ cup butter
- ¼ cup all-purpose flour
- 1½ cups cream
- 1 cup grated sharp Cheddar cheese
- Freshly ground Pepper
- Pinch Cayenne
- Pinch nutmeg
- In a large saucepan cook the brocoli in the chicken broth until tender.
- Purée in a food processor or blender.
- In a large pot melt the butter, whisk in the flour and cook for 2 to 3 minutes.
- Whisk in the brocoli purée, cook 5 minutes, or until thickened and bubbly.
- Whisk in the cream, cheese, Pepper, Cayenne and nutmeg.
- Continue cooking until the cream is heated through and the cheese is melted.
