Crustless ham and asparagus quiche (Keto breakfast)

  • 2 cups sliced asparagus
  • 1 red bell pepper, chopped
  • 1 tablespoon water
  • 1 cup whole milk
  • 4 eggs
  • 4 ounces chopped cooked dell ham
  • 2 tablespoons chopped fresh tarragon or basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup finely shredded Swiss cheese
  1. Preheat oven to 350F.
  2. Combine asparagus, bell pepper and water in microwavable bowl ; cover with waxed paper, microwave on HIGH 2 minutes or until vegetables are crisp-tender, drain vegetables.
  3. In a large bowl, whisk milk and eggs until well blended ; stir in vegetables, ham, tarragon, salt and pepper.
  4. Pour into 9-inch pie plate ; bake 35 minutes, sprinkle cheese over quiche and bake 5 minutes longer or until center is set and cheese melted.
  5. Let stand 5 minutes before serving ; cut into 6 servings.
