- 6 eggs
- 1 jarred roasted bell pepper, chopped
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 1½ cups crumbled feta cheese
- ½ cup chopped onion
- 2 tablespoons chopped fresh parsley
- ¼ teaspoon dried dill weed
- Salt and black pepper
- Preheat oven to 400F ; spray 1-quart baking dish with nonstick cooking spray.
- Whisk eggs in large bowl until foamy ; stir in pepper, spinach, cheese, onion, parsley and dill weed, season with salt and black pepper.
- Pour into prepared baking dish ; bake 20 minutes or until set.
- Let stand 5 minutes ; cut into 4 squares to serve.
