Feta Brunch Bake (Keto breakfast)


4 servings
  • 6 eggs
  • 1 jarred roasted bell pepper, chopped
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
  • 1½ cups crumbled feta cheese
  • ½ cup chopped onion
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon dried dill weed
  • Salt and black pepper
  1. Preheat oven to 400F ; spray 1-quart baking dish with nonstick cooking spray.
  2. Whisk eggs in large bowl until foamy ; stir in pepper, spinach, cheese, onion, parsley and dill weed, season with salt and black pepper.
  3. Pour into prepared baking dish ; bake 20 minutes or until set.
  4. Let stand 5 minutes ; cut into 4 squares to serve.
