- 1 lb chicken breasts, sliced
- ½ teaspoon mix seasoning
- Salt and black pepper, to taste
- 1 cup baby spinach
- 2 tablespoons olive oil
- 4 oz feta cheese, crumbled
- ½ cup mozzarella, shredded
- Rub the chicken with spice mix, salt, and black pepper ; put it in a casserole dish and layer the spinach over.
- Mix the olive oil with feta and mozzarella cheeses, ½ cup of water, and black pepper and stir ; pour the mixture over the chicken and cover the casserole with aluminium foil.
- Bake in the oven for 20 minutes at 375F, remove foil and continue cooking for 15 minutes until a nice golden brown color is formed on top.
