Feta and Mozzarella Chicken (Keto for beginners)

 


4 servings

  • 1 lb chicken breasts, sliced
  • ½ teaspoon mix seasoning 
  • Salt and black pepper, to taste
  • 1 cup baby spinach
  • 2 tablespoons olive oil
  • 4 oz feta cheese, crumbled
  • ½ cup mozzarella, shredded
  1. Rub the chicken with spice mix, salt, and black pepper ; put it in a casserole dish and layer the spinach over.
  2. Mix the olive oil with feta and mozzarella cheeses, ½ cup of water, and black pepper and stir ; pour the mixture over the chicken and cover the casserole with aluminium foil.
  3. Bake in the oven for 20 minutes at 375F, remove foil and continue cooking for 15 minutes until a nice golden brown color is formed on top.
  4. Serve
