For 4 servings
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1½ lb ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons almond flour
- 1 cup beef broth
- ½ cup coconut cream
- ¼ cup chopped fresh dill
- ¼ cup chopped fresh parsley
- Salt and black pepper to taste
- Preheat oven to 380F.
- In a bowl, combine beef, garlic powder, onion powder, salt, and pepper ; form meatballs from the mixture and place them on a greased baking sheet.
- Drizzle with olive oil and bake until the meat cooks, 10-15 minutes ; remove the baking sheet.
- Melt butter in a saucepan and stir in almond flour until smooth ; gradually mix in broth, while stirring until thickened, 2 minutes.
- Stir in coconut cream and dill, simmer for 1 minute and stir in meatballs ; spoon the meatballs with sauce onto a serving platter and garnish with parsley.
