Zucchini & Bell Pepper Chicken Gratin (Keto for beginners)

 


For 2 servings

  • 1 red bell pepper, sliced
  • 1 zucchini, chopped
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 chicken breasts, sliced
  • 1 tomato, chopped
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ cup shredded mozzarella
  1. Coat the chicken with salt, pepper and garlic powder.
  2. Warm olive oil in a skillet over medium heat and add in the chicken slices ; cook until golden and remove to a baking dish.
  3. To the same pan, add the zucchini, tomato, bell pepper, basil, oregano and salt and cook for 2 minutes ; spread the mixture over the chicken.
  4. Bake in the oven at 350F for 20 minutes ; sprinkle the mozzarella over the chicken, return to the oven, and bake for 5 minutes until the cheese is melted and bubbling, serve.
