For 2 servings
- 1 red bell pepper, sliced
- 1 zucchini, chopped
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 chicken breasts, sliced
- 1 tomato, chopped
- ½ teaspoon oregano
- ½ teaspoon basil
- ½ cup shredded mozzarella
- Coat the chicken with salt, pepper and garlic powder.
- Warm olive oil in a skillet over medium heat and add in the chicken slices ; cook until golden and remove to a baking dish.
- To the same pan, add the zucchini, tomato, bell pepper, basil, oregano and salt and cook for 2 minutes ; spread the mixture over the chicken.
- Bake in the oven at 350F for 20 minutes ; sprinkle the mozzarella over the chicken, return to the oven, and bake for 5 minutes until the cheese is melted and bubbling, serve.
