For 2 servings
- 2 tablespoons ranch dressing
- ½ cup almond flour
- 1 egg
- 2 tablespoons garlic powder
- 2 chicken breasts, cubed
- Salt and black pepper, to taste
- 1 tablespoon butter, melted
- Preheat oven to 400F ; grease a baking dish with butter.
- In a bowl, combine salt, garlic powder, almond flour, and black pepper and stir ; in a separate bowl, beat the egg.
- Dredge the chicken cubes to the egg, then in the flour mixture.
- Cook in the oven for 18-20 minutes, turning halfway through, until golden and crispy ; remove to paper towels, drain the excess grease and serve with ranch dressing, if desired.
