Chicken Souvlaki

 


6 skewers

  • 2 chicken breasts, cut into 2 cm (1 in.) cubes

Souvlaki marinade

  • Zest and juice of 2 lemons
  • 60 ml fresh oregano, chopped
  • 2 garlic cloves, minced
  • 80 ml olive oil
  • Salt and pepper

  1. In a large bowl, combine all the marinade ingredients; add the chicken cubes and mix well, cover and marinate in the fridge for a minimum of 6 hours.
  2. Thread the chicken cubes onto previously soaked wooden skewers.
  3. Cook the skewers for 10 to 12 minutes over medium heat on the barbecue; turn occasionally during cooking.
  4. Serve the skewers with a Greek salad or pitas topped with tzatziki.
