Pan-Bagnat

 


                The pan-bagnat is the traditional Nice sandwich, which can be enjoyed on the way back from the beach. It's kind of like a Salad Niçoise on bread. This sandwich is complete, fresh and delicious. You can also enjoy it as an aperitif accompanied by a glass of Rosé de Provence.

For 1 serving

  • 1 bagnat bread
  • 1 clove of garlic
  • 30 ml olive oil
  • 1 hard-boiled egg, cut into thin rounds
  • 1 onion, thinly sliced
  • 1 large tomato, thinly sliced
  • ½ green bell pepper, thinly sliced
  • 1 small can of tuna
  • 3 anchovies in oil
  • 5 black olives, pitted and sliced
  • 15 ml fresh basil, chopped
  • Salt and pepper

  1. Cut bread in half; rub the inside of the 2 slices of bread with the garlic clove then brush the slices of bread generously with olive oil, salt and pepper.
  2. Place the tomato, pepper, onion, tuna, anchovies, egg, black olives and basil on the bottom slice of bread.
  3. Season and close the pan-bagnat with the other half of the bread.
  4. Leave to cool in the fridge for 1 hour before serving.
