The pan-bagnat is the traditional Nice sandwich, which can be enjoyed on the way back from the beach. It's kind of like a Salad Niçoise on bread. This sandwich is complete, fresh and delicious. You can also enjoy it as an aperitif accompanied by a glass of Rosé de Provence.
For 1 serving
- 1 bagnat bread
- 1 clove of garlic
- 30 ml olive oil
- 1 hard-boiled egg, cut into thin rounds
- 1 onion, thinly sliced
- 1 large tomato, thinly sliced
- ½ green bell pepper, thinly sliced
- 1 small can of tuna
- 3 anchovies in oil
- 5 black olives, pitted and sliced
- 15 ml fresh basil, chopped
- Salt and pepper
- Cut bread in half; rub the inside of the 2 slices of bread with the garlic clove then brush the slices of bread generously with olive oil, salt and pepper.
- Place the tomato, pepper, onion, tuna, anchovies, egg, black olives and basil on the bottom slice of bread.
- Season and close the pan-bagnat with the other half of the bread.
- Leave to cool in the fridge for 1 hour before serving.
