This entry is essential. You will taste these fritters, crispy and firm, accompanied by a glass of wine.
For 4 servings
- 125 g of flour
- 1 egg
- 15 ml olive oil
- 400 g squid rings
- Frying oil
- 1 pinch of salt
- 1 pinch of pepper
- Sift the flour into a bowl and add the egg, olive oil, salt and pepper.
- Mix by gradually pouring in 150 ml of ice-cold or very cold water; the dough should be smooth and thick; leave to rest for an hour in the fridge.
- Pass the squid rings under cool water and dry them.
- Heat fryer oil; dip the rings in the donut batter then in the hot oil.
- Brown the fritters for 5 minutes; Drain on paper towel and serve with lemon wedges.
