Squid fritters

 


                This entry is essential. You will taste these fritters, crispy and firm, accompanied by a glass of wine.

For 4 servings

  • 125 g of flour
  • 1 egg
  • 15 ml olive oil
  • 400 g squid rings
  • Frying oil
  • 1 pinch of salt
  • 1 pinch of pepper

  1. Sift the flour into a bowl and add the egg, olive oil, salt and pepper.
  2. Mix by gradually pouring in 150 ml of ice-cold or very cold water; the dough should be smooth and thick; leave to rest for an hour in the fridge.
  3. Pass the squid rings under cool water and dry them.
  4. Heat fryer oil; dip the rings in the donut batter then in the hot oil.
  5. Brown the fritters for 5 minutes; Drain on paper towel and serve with lemon wedges.
