8 skewers
- 5 ml olive oil
- 1 onion, finely chopped
- 15 ml tomato paste
- 5 ml cinnamon
- 2 ml cumin
- 2 ml sweet paprika
- 2 ml crushed hot pepper
- 450 g ground beef
- 60 ml fresh cilantro, chopped
- Salt and pepper
- 30 ml vegetable oil
- In a frying pan, heat the oil and sauté the onion for 1 minute; add the tomato paste and spices, then continue cooking for 2 to 3 minutes and leave to stand for 5 minutes.
- In a bowl, combine the onion mixture with the ground meat; add the cilantro and stir well, seasoning generously.
- Shape long balls of minced meat around previously soaked wooden skewers.
- Brush the skewers with a little oil and cook for 15 to 20 minutes on a baking sheet at 400F (200C) or on aluminum foil placed on the barbecue grill; turn the skewers occasionally.
- Serve with spicy tomato sauce or hummus.
