Raspberry-Chocolate coffee cake (Holidays menus for the family)

 


12 servings

  • Streusel (recipe below)
  • 2 cup all-purpose flour
  • ¾ cup sugar
  • ¼ cup margarine or butter, softened
  • 1 cup milk
  • 2 teaspoons baking powder 
  • 1 teaspoon vanilla 
  • ½ teaspoon salt
  • 1 egg
  • 1 package (6 ounces) semisweet chocolate chips
  • 1 cup fresh or unsweetened frozen raspberries
  1. Heat oven to 350F ; grease square pan, 9 x 9 x 2 inches.
  2. Prepare streusel.
  3. Beat remaining ingredients except chocolate chips and raspberries on low speed 30 seconds ; beat on medium speed 2 minutes, scraping bowl occasionally.
  4. Spread half of the batter in pan ; sprinkle half each of the chocolate chips, raspberries and streusel.
  5. Repeat with remaining batter, chocolate chips and streusel.
  6. Bake about 50 minutes until toothpick inserted in center comes out clean.
  7. Serve warm or cool.
Streusel
  • One-third cup all-purpose flour
  • ¼ cup sugar
  • ¼ cup margarine or butter
  • One-third cup slivered almonds
  1. Mix flour and sugar ; cut in margarine until crumbly.
  2. Stir in almonds.
