Raspberry Clafouti

 


                A simple French dessert.

Serves 8

  • 3 eggs
  • 1¼ cups milk
  • Two-third cup all-purpose flour
  • One-third cup sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • 1½ cups raspberries
  • Confectioners' sugar
  1. Butter a 9-inch pie plate.
  2. In a small bowl beat the eggs with an electric mixer until foamy.
  3. Add the remaining ingredients except the raspberries and confectioners' sugar.
  4. Beat on low speed until smooth ; pour the batter into the prepared pie plate.
  5. Sprinkle the berries on top ; bake in a 350F (180C) oven for 45 minutes.
  6. Sprinkle with confectioners' sugar before serving.
