Makes about 5 dozen
- 3 cups brown sugar
- 1½ cups vegetable oil
- 3 cups pumpkin (1 large can)
- 1 tablespoon vanilla extract
- 6 cups all-purpose flour
- 1 tablespoon baking soda
- 1 tablespoon baking powder
- 1½ teaspoons salt
- 1½ teaspoons cinnamon
- 1½ teaspoons nutmeg
- ¾ teaspoon ginger
- 3 cups raisins
- 1½ cups chopped nuts
- Beat together the brown sugar, oil, pumpkin, and vanilla.
- Sift together the dry ingredients and add to the pumpkin mixture.
- Stir in the raisins and nuts.
- Drop by rounded teaspoonfuls 2-inch apart onto a greased baking sheet.
- Bake in a 350F (180C) oven for 8 to 10 minutes or until lightly browned.
