Dress up these delicious pancakes with sliced fresh strawberries and a dollop of whipped cream.
Makes 12 pancakes
- 2 eggs
- 1½ cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1¼ cups milk 2 tablespoons butter or margarine, melted
- 1 teaspoon vanilla
- 1 large banana, peeled, chopped
- ½ cup miniature semisweet chocolate chips
- Heat griddle to 375F (190C) or heat skillet over medium-high heat ; grease with vegetable oil.
- In large bowl, beat eggs with wire whisk until lightly beaten ; beat in remaining ingredients except banana and chocolate chips just until smooth.
- Stir in banana and chocolate chips.
- For each pancake, pour batter by slightly less than ¼ cupfuls onto hot griddle.
- Cook about 1½ minutes or until puffed and dry around edges ; turn and cook other sides until golden brown.
